When Morgan and Nic Maw graduated, they decided to stray away from the crowds of Kiwis heading to London, and instead spent their OE in Edinburgh, Scotland. It was there that Morgan discovered the perfect vehicle for her love of baking, and cheese, the humble oatcake. On a return visit to New Zealand, she saw the artisanal cheese industry flourishing, but nothing more interesting than a rice cracker to accompany it. After perfecting her recipe with the aid of some wise Scots, the couple moved to Auckland and started experimenting with oatcakes using local ingredients.
Bonnie Oatcakes are now stocked in stores all over New Zealand and the Canterbury Linseed flavour won the Cuisine Artisan Award this year. Despite the rapid growth of the business, Morgan and Nic are determined to maintain their original values and only use the best local ingredients they can find.
